Young Matthias hails from Vienna and so it just has to be that most famous of chocolate cakes, the Sacher Torte. The confection has an interesting provenance. In 1832, Franz Sacher, apprenticed to the personal chef of Prince Wenzel von Metternich, created a special dessert for the Prince’s guests who were delighted with it. But it was Franz’s son Eduard who perfected the recipe before serving it in Demel’s – a well-known Viennese coffee house, and later at his Hotel Sacher.
Of course, the original recipe is a closely guarded family secret but the rich chocolate cake, thinly coated with apricot jam, sandwiched and crowned with a chocolate icing is best served with a portion of whipped cream – enjoy!
A former national road race champion, Matthias has enjoyed his best results on the roads of Italy and Austria and, more recently, won the combativity award on stage 12 of this year’s Vuelta a Espana.
