Ultimate Vegan Banana Cake
Makes 1 good 900G loaf.
Ingredients:
- 75ml melted coconut oil, plus extra for greasing
- 200g pecans or walnuts
- 200g oats
- 4 large ripe bananas
- 100g coconut or raw sugar
- 100ml maple syrup
- 100ml unsweetened almond milk
- 2 teaspoons baking powder
- 75g dark chocolate (70%) chopped or 150g of raisins
Preheat the oven to 170°C/150°C fan/gas 3 and get all your ingredients together. Grease a 900g non-stick loaf tin with coconut oil.
While the oven comes up to temperature, roast the pecans/walnuts in it for 10 minutes, then roughly chop and set aside. Meanwhile, blitz the oats in a food processor until you have a scruffy flour. Put the oat flour into a bowl.
Put the bananas into the food processor with the 100g of coconut sugar, maple syrup, almond milk and melted coconut oil and blitz until well combined. Add the oat flour, baking powder and a good pinch of salt. Blitz until combined, then stir in the pecans/walnuts and chocolate/raisins.
Pour the batter into the loaf tin. Bake for 1 hour 10 minutes, or until a skewer comes out clean. Leave to cool on a wire rack for at least 30 minutes.
Sheree’s Handy Hints
1. All ingredients should be at room temperature.
2. When I’m baking I always use a timer as it’s so easy to lose track of time. Once you’ve put the cake in the oven, put the timer on for 5-10 minutes less than the cake should take to cook and then check regularly.
3. If you think the cake is browning too quickly, particularly at the edges, cover it with an aluminium foil tent.
4. When I have surplus ripe bananas I unpeel them, wrap them in greaseproof paper and freeze for later. If you’re making smoothies in a blender, you can add them still frozen.
5. If you don’t have any truly ripe bananas, roast them in the oven, still in their skins, to bring out their innate sweetness.
6. I used a 200g packet of mixed dried fruit but you can vary the mix according to taste.
